Bartsy's Sweet Potato Puff


2-3 large sweet potatoes
2-3 T butter
¼ tsp nutmeg
½  tsp cinnamon
1-2 beaten eggs
1 tsp baking powder
1/4 c Brown Sugar


Boil sweet potatoes until tender, drain.

Peel, mash, and mix in all ingredients.

Bake 350 for about 20 - 30 minutes or until "puffed".

Top with pecans or walnuts before baking if desired.

Pork with Apples and Sweet Potatoes

I had purchased a whole pork loin and froze 2/3 of it without cutting it first so then had to thaw all of and come up with several recipes to use it up. This was pretty easy and even tastier than I expected.

 
about 1 lb of pork loin
apple, chopped, not peeled
sweet potato, chopped
Orange wedges and juice
sprinkle brown sugar
drizzle of honey
crushed fennel seed
crushed rosemary
black pepper
garlic powder
water

The amounts will depend on how much meat you have and how many people you are feeding, and how much you like each seasoning. Go light on the brown sugar as this is meant to be a savory dish
Put chopped apples and sweet potatoes on bottom of 7x11 pyrex baking dish (or whatever) and rest roast in center sprinkle seasonings on vegetables and meat. 
Bake 40 -60 minutes depending on the size of the roast.

Note:
I like to crumble the fennel seeds and rosemary so you don't get to much in one bite...
I usually put a little water (or other liquid) in the bottom of the pan to keep things moist and prevent the juices from burning while baking.
I think I will try adding some chopped onions next time to give it a little more complexity.

Another good autumn recipe

Bartsy's Sweet Potato Puff

2-3 large sweet potatoes
4 T butter

1/4-1/2 c brown sugar
sprinkle nutmeg
1/4-1/2 tsp cinnamon
1-2 beaten eggs
1 tsp Baking powder


Boil sweet potatoes until tender, about 30 minutes.

Peel, mash, mix in all ingredients. Bake for about 20 minutes or so, until "puffed".

Note: Its a good idea to allow time for the sweet potatoes to cool before you peel them, it can be very challenging to peel them without touching them...but if you can't wait : cut the ends off and cut the skin from one end to the other then use something to protect your hand and you can slip the whole potato out into the bowl.

An easy way to eat more vegetables

Roasted (or grilled) Vegetables
Slice or cut any of the following into bite size chunks, slices or wedges:

Sweet Potatoes (slices work well)
Potatoes
Squash
Zucchini
Eggplant
Asparagus (leave whole)
Bell peppers
Onion slices
mushroom

Coat with Olive Oil; sprinkle with salt and pepper; sprinkle with herbs ( Rosemary very good , try thyme, etc Roast 20-30 minutes depending on temp and size of vegetable pieces.
